We had one of my favorite things to make for dinner last night - BBQ Chicken Tacos. Well, at least I thought we were having tacos, until I realized we didn't have any taco shells. Why does it feel like something like that happens in our house on at least a weekly basis?? Anyway, I realized we didn't have taco shells after I already made the chicken, so we ended up making nachos/taco salad using tortilla chips, instead. Thankfully, it ended up being equally delicious!

These things are so good and so easy to make. As I might have mentioned before, I don't really follow recipes, but here are the basics (and my best guestimates):

Combine the following in a crockpot:
- 1-1.5 lbs of boneless chicken breast (I use the thin sliced pieces)
- 1 16 oz bottle of bbq sauce (I use Sweet Baby Ray's)
- 2 cups of water
- 1/2 jar of salsa (I've used different kinds and different amounts, so it's really however you like it.)
Cook on low for about 7 hours. This is probably on the high end, especially if you're using thin sliced breasts, but I'm a little paranoid about making sure my meat is cooked.
Take the cooked chicken out of the crockpot and shred with forks. Then, mix the shredded chicken with some of the sauce from the crockpot (as much or little as you like).
Scoop the chicken into taco shells and bake as directed on package.
Add toppings of your choice + serve!
As you can see, I like mine a little plain. But, I'd imagine a "normal" person would add things like cheese, salsa, sour cream, etc. These take literally two minutes to throw into the crockpot, so they're perfect if you have a baby who can't stand to be put down for longer than ten minutes like I do.
