My mom always puts peanut butter chips in her brownies; therefore, I always put peanut butter chips in my brownies. I remember going to friends houses or class parties growing up and having just plain old brownies and thinking "what the heck is this?" (definitely thought they were making them wrong). If you haven't tried adding in some PB chips to your brownies (or anything chocolate that you make), I urge you to do so immediately.
Since we are big fans of pretty much anything chocolate + peanut butter in this house, Tyler suggested I try making some chocolate cake mix cookies after testing out these strawberry ones around Valentine's Day. Of course, PB chips were a must! These things are addictive, so I thought I'd do you all a favor and share the recipe so you can try them for yourselves!
Ingredients:
1 box chocolate cake mix (we happened to use Pillsbury Devil's Food, but any would do)
1 teaspoon baking powder
2 eggs
1/3 cup vegetable oil
1 bag Reese's peanut butter chips (we used almost the entire bag, but you can add as much or little as you'd like)
Directions:
Preheat oven to 350 degrees. Grease baking sheet or line with parchment paper. Mix together all ingredients and roll into balls (I probably did close to rounded tablespoonfuls - totally an estimate). Place on baking sheet about two inches apart and bake for approximately 11 minutes. Not going to lie, I did 11 because I was aiming for 10 but my finger held down the timer button on the stove a little too long, but they came out perfectly! ;) If you make your cookies bigger or smaller, you should adjust the time accordingly.
They will come out of the oven pretty soft and should stay that way. They're best still warm, when the peanut butter chips are nice + gooey! :)
Pour yourself a cup or milk (or coffee) and enjoy!!
P.S. Our PB chips look more like chunks because the bag was mistakenly left on the hot stove top after a grocery trip one day and they all melted together. I had to chisel away at the giant chunk of peanut butter to make these cookies, but it tasted the same and the big pieces were actually pretty tasty. ;)
